Quick tomato sauce
When the tomatoes come all at once in September, this is what to do with them. No peeling, no fuss.
What you need
- About 500g ripe tomatoes, roughly chopped
- 1 clove of garlic, sliced
- 2 tablespoons olive oil
- A few basil leaves if you have them
- Salt
How to make it
- Warm the oil in a pan and soften the garlic for a minute, don't let it brown.
- Tip in the tomatoes and a good pinch of salt.
- Simmer for 20 to 25 minutes, squashing them down, until thick.
- Tear in the basil at the end. Toss with pasta, or spoon over anything.
